Hi everyone....Do not fall over with surprise, this will be the second post in less than two weeks. For those of you that know me, know that I am a cooking fanatic. I love to cook! So, Rob gave me this great idea to post some of Robs favorites recipes. I like to watch the food network and use some of the recipes from there and then add my own twist to them, or I like to make up my own.
For tonight we had a classic pub favorite Nachos! So delicious and scrumptulesent!
These were inspired by nacho dish at a restaurant in Arlington, TX .
2 Large Idaho Spud
1 Sweet Onion
2 cups Cheese
2 t Cayenne pepper
2 t Cumin
2 t Chili Powder
1 t Salt
1/2 t pepper
2 limes
1 Jalapeno
4 Chicken tenders
Ariba Red Salsa
1 T Cilantro
First, lay out chicken tenders with a little extra virgin olive oil s and p and the juice of 1 lime. Put on a pan and roast in oven for 15-20 min at 450. While the chicken is cooking I dice up a half of an sweet onion and put in a pan with a little olive oil and 1T of butter, I cook those down till they are nice and brown and caramelized. While the onions are going I slice the potatoes thin but not too thin. I dry them off to absorb the water from the potatoes.
Then I fry them in canola oil 2 times ( the first is to cook them on the inside and then the second is to crisp them). After done with the second fry dust with cayenne, cumin, chili powder, and s/p mixture while they are still hot.
When potatoes are done lay them flat in one layer in a baking dish then layer in the caramelized onions and top with lots of cheese and then the cooked chicken on top with the jalapeno cut up into rounds. I put that in the oven and let cook for 10 min at 450 till the cheese melts and starts to get golden brown on top.
While the nachos are heating up I like to warm up some salsa in a pot. I specifically like the salsa from Costco called Ariba Roasted Red Salsa.
When the nachos come out dish up with a little dab of sour cream, a spoon full of the warm salsa, and a little lime juice to perk it up a bit. Then finish it off with a little cilantro:)

MERRY CHRISTMAS....from Texas!
Well this is our first Christmas away from Boise and Utah! We are really sad that we will not be with our families on Christmas. But, regardless we are going to enjoying hanging out and having a little vacation.
Things here in Texas are going really well. We are really like living here although it is pretty far from Boise and Utah. I am working at a tennis club in Southlake and Rob is working as the head stringer there. I has been a lot of fun working together! We have really enjoyed the weather...it was 72 degrees today, it was great we were wearing shorts, tee shirt and flip flops on December 23rd....CRAZY! But, we are loving it.
We sure miss you all and we hope that you have a great holiday and we are very grateful for all of your friendships.
